When you leave a scheduling tool, two things need to happen: (1) you get a clean export of your historical booking data (if you want it), and (2) the tool actually deletes the data. Most tools do step 1 reliably; step 2 is where the trust gap is.
What a clean export should include
CSV of all bookings with: date, invitee name, invitee email, meeting type, duration, timezone, status (confirmed/canceled/no-show), and any custom form fields. Plus a JSON blob of account metadata (settings, link configs, team members if applicable).

Verifying deletion
Most tools say they delete within 30-90 days. Verification: try to log in a month later. If the account is gone, deletion is plausible. For audit-grade verification, email support and ask for deletion confirmation in writing.
Third-party deletion after acquisitions
If the scheduling tool gets acquired (Acuity by Squarespace, for example), your deletion request should still be honored — but the legal entity you're dealing with has changed. Some users report needing to re-request deletion from the acquirer. Plan for this.
